WARMER KARTOFFELSALAT (Warm German Potato Salad)

4 med.  Pota toes, boiled in skins ¼ tsp. Pepper
3 slices bacon , chopped  1 tsp. Chives
¼ c. chopped onion 1 tsp. parsley
1 Tbsp.  flour ½ cup water
2 tsp. sugar 2 ½  Tbsp.  vinegar
½ tsp. salt  

Peel potatoes and slice.  Sauté chopped bacon until crisp.  Add chopped onions into bacon fat and sauté until they have that glazed look.  Blend in flour, sugar, salt and pepper.  Cook over low heat, stirring until smooth and bubbly.  Remove from heat.  Stir in water and vinegar and heat to just boiling point, stirring constantly.  Remove from heat.   Add parsley, chives and potatoes.  Stir gently.  Let stand until ready to serve.  Makes about 4 servings
