ROTKOHL    (Red Cabbage)

1 small head red cabbage 1/4 tsp. Pepper
4 Tbsp. sugar 1 small chopped onion
3 Tbsp. bacon grease 5 cloves, allspice and 2 bay leaves
1/2 tsp. salt 1 cup water
2 med. sized apples. sliced 4 Tbsp. vinegar
Remove coarse outer leaves from cabbage.  Cut head into four pieces, remove the hard core and shred finely.  Melt bacon grease in a large pot, add apple, onion and let steam a little.  Add  cabbage stirring until well mixed.  Add water, vinegar, sugar and spices.  Cook until tender about 1 hour.  Stir frequently.  If needed thicken at the end with a little water and a tsp. cornstarch to glaze.  Serve with pork, beef or game.
